Did you know that the cheapest teas are referred to as tea dust? Tea dust is a low-quality grade of fine grained black tea.
The cheapest teas are graded as dust, the scraps and dust leftover from processing. The smaller the particle, the lower the quality. These teas are typically bagged and flavored with mint, lemongrass, or other strong flavors that cover the stale, oxidized taste.

Fannings are very small tea leaf pieces sifted out of better grade teas. Broken leaf and whole leaf are the other two grades. The highest grade is whole leaf tea which is the only tea sold at De Vos Tea!

Tea has been used for cooking for many centuries by Asian cultures. Tea can add great flavor to some of your favorite dishes. The Oolong Brined Shrimp is a light dish that focuses on the flavor and fragrance of the tea and the crunchy texture of the shrimp.
Cooking Time: 30 – 45 Minutes
Ingredients:
Main dish: Oolong Brined Shrimp
1 pound shrimp (deveined and shelled if desired)
5 grams or 1 ½ teaspoons of Sapphire Oolong tea
1 1/2 cup water
2 cups ice
1/4 cup sugar
1/2 cup kosher salt
3 tablespoons olive oil
3 cloves garlic, minced
Fresh ground black pepper to taste
1 tablespoon finely chopped Italian parsley
Side dish: Stir fried vegetables
1 small red pepper, julienne cut (Cut into long thin strips)
1 small zucchini, julienne cut
8 baby portabella mushrooms
1 bunch of long green onions, chopped
4 tablespoons olive oil
2 Cloves garlic cloves chopped
Directions:
Shrimp marinade
To brew the tea bring water to boil, pour over 5 grams or 1 ½ teaspoons of Sapphire Oolong tea. Cover and steep for 5 minutes. Remove tea leaves.
Stir in salt and sugar to dissolve in tea. Add ice and stir to melt until tea mixture is cooled. Place shrimp in bowl or zip lock bag and add tea mixture to shrimp to cover. Refrigerate 20 minutes.
Drain and return shrimp to a bowl. Drizzle with oil and the garlic and toss to coat. Place shrimp in a single layer rimmed baking pan. Sprinkle on the pepper. Bake in a preheated 450F oven until shrimp are bright pink, about 8 minutes.
While the shrimps are in the oven, stir fry vegetables to compliment this great dish.
Stir fried vegetables
Preheat large skillet and add 4 tablespoons of olive oil and sauté the chopped garlic, green onions, red pepper, mushrooms, and zucchini until slightly tender.
Once the shrimps are ready sprinkle with parsley and serve immediately. You can choose to steam rice with your shrimps and stir fried vegetables.

Well I can’t say this is a bad job! Right now I am tasting all the tea samples from the different estates to find the best ones to sell. I will only be selling a few teas in the beginning, as I will be selecting the best from each type of tea: white, green, oolong and black.
Better to sell a few great teas than many ho-hum teas.
